   The unit itself is nice, hefty stainless steel. Not heavy though. With the grate and the stone, it’s still easy to lift off. The aluminum peel is very nicely made too. It’s thinner than my bamboo peels, so it slides up under the pizza easier. I guess time will tell on the stone, but it looks nice. Assembly was easy with just finger-tightening of a few wing nuts, though the manual had some typos and could have been written better. I was easily able to get to 700 degrees and produced a couple great pizzas just hours after it arrived. The technique outlined in the manual really works to get your kettle screaming hot. A couple things I have learned so far: On my first attempt I used a full chimney of charcoal and let it get going really well before adding the unit and stone on top. I preheated the stone for approximately 45 minutes, then removed it and added wood chunks. I had read temperatures of 900 degrees were possible so I let it go about 15 minutes longer hoping for that but it never got over 700. My first pizza cooked in about 4 minutes at 700 degrees and was very nice. The second one, which went on right after that, took longer as the temperature was dropping as the fuel ran out. The bottom cooked great but I had to take it off before the top was where I wanted it. Lessons learned here: Preheat about 15 to 30 minutes and get the wood on. If your temperature plateaus at something a little lower than 900, just go with it. 700 is plenty good too. You want to get your pizzas cooked before the fuel runs out. Update 4/2017: I’ve learned a little more after a few uses. Load a full chimney and when they’re going dump them out to the back. Add about 15 more coals on top, then place the KettlePizza and stone on top to preheat for 20 minutes. The stone doesn’t have a lot of mass, so it’s not going to benefit from a longer preheat, and you want to get the coals at their sweet spot, not as they’re dying. When it’s preheated, remove the insert and cover the coals with wood chunks — that’s what gets the heat up — but don’t over do it, or your fire will get so hot you’ll regret it. There is such a thing as too hot and too quick. ( I did it once with a lot more wood, and the back side of the pizza burned badly in about a minute). Also, I’ve been placing a foil-lined Weber grate on top of the insert. I think it reduces heated air space over the pizza, and directs the heat down closer to the pizza. With this setup temperatures settle at 700 or above, which is plenty hot. They take about 3 minutes to cook this way. Also, sometimes I’ve been doing “doming” at the end. If the top doesn’t look cooked to your satisfaction, lift the pizza off the stone toward the top of the insert. This gets the top more melted without further cooking of the bottom of the crust. All-in-all, I love this thing. There’s a learning curve, but it’s worth it.

   I blew it on the first cook. First rule of cooking is to not try new things when it has to succeed. a.k.a. your pregnant wife is hungry. My only problem was trying to use flour to keep the dough from sticking to the peel. A quick jerk to slide my pizza onto the stone, instantly converted my pizza into an inside out calzone. The other mistake I made was only throwing in a couple of hardwood chunks. I went and bought a small bad of Polenta and on the second go, I threw in five fist sized hardwood chunks and made a couple of great pizzas and had a lot of fun doing it. I am ordering the wood peel as well, so that I can make a pizza on it and have it ready to go while one is cooking.

   Because it’s winter in MN, we have only used this once since I gave it to my husband for Christmas. However, it was very easy to use and we made a fabulous pizza! Nice and crunchy on the crust. I did turn the pizza during the cooking to get it evenly done. I’d suggest using a crust recipe that has only a little yeast (1/2 tsp for 1 c flour) for one medium pizza. That means it will not try to rise too much. The pizza stone that is included is much thicker than our regular one; it does get hotter than our oven (it got to 550-600 F for us this time; maybe hotter in warmer weather?). I love the steel peel too. I have a wooden one, but I’m sure it would get burned if I stuck it in the grill. Be sure to use plenty of corn meal. One trick is to build the pizza on parchment (on something you can slide it off of, in my case, the wooden peel), and then slide the pizza (not the parchment) onto the corn meal sprinkled steel peel. No sticking. If you build the pizza right on the peel, it will likely have time to find a place to stick.

   It also has a temp gauge to see how hot it is inside.
   Only caveat is that you need to buy lump coal that burns hotter than regular in order to get it hot enough inside.

   i LOVE the fact that i can make my own pizza now, ive become quite obsessed with it to be honest. do yourself a favor and do a little bit of research online to find some mods on how to make this adapter work better by adding a “ceiling” to block the top dome part of your kettle grill to keep all the heat in the main chamber. now here are the things that i dont like. The price. This item is WAY overpriced for what you are getting. its a piece of metal with some hardware. yes, i know…its stainless steel, but come on, the price is a little much. and, the its very sketchy how the wing nuts act as the main support tabs for the metal grate. there is barely any surface area for the grate to rest on. very cheap solution for a mount Weber. and dont bother with the complete kit that comes with pizza peel and baking stone. those two items are very inexpensive to purchase separately.
